02fdceb959 Update OpenAI client to use stable API and bump minimum version to 2.0.0 
- Remove beta prefix from completions.parse
- Update OpenAI dependency to >=2.0.0
- Fix whitespace formatting
- Update all requirement files
- Clean up pyproject.toml dependencies

fdcb4d0b6d Replace PyPDF2 with pypdf for PDF processing 
- Update import from PyPDF2 to pypdf
- Change dependency to pypdf>=6.1.0
- Update all requirements files
- Remove PyPDF2 from lock file
- Use modern pypdf library
