Refactor text cleaning to use sanitize_text_for_encoding consistently

• Replace clean_text with sanitize_text
• Remove deprecated clean_text function
• Add whitespace trimming to sanitizer
• Improve UTF-8 encoding safety
• Consolidate text cleaning logic
